I started this journey with Chai out of a quest for improved health. Having suffered from migraines for the past few years a medical herbalist hinted at me that things needed to change, one of these "things" was my consumption of coffee. I do love herbal teas but I need something to replace my coffee ritual. So I investigated Chai. I quickly found that not all chai was equal. To my disappointment I realised the "chai Latte's" I was ordering were from a powder or syrup, sweet and unsatisfying to someone wanting to clean up their body. Next came Chai Tea! Don't get me wrong, there were and are some beautiful blends out there but often times were inadequately brewed and not given the love that a good cup of tea or coffee needs to become "Great"!! I thought that there must be something better. There was! After a morning mountain biking I found this in a tiny indian run cafe in Landsborough. Its was a sticky chai, made with real ingredients, enriched with honey and brewed with love. Being a home cook - of course - I came up with a blend. I bought spices, tea, fresh ginger and used a gorgeous raw honey. The word Kaimata means "fresh" or "raw" in Maori and since I come from New Zealand it seemed a fitting name.  Happy sipping.
